In Nigeria Couscous is eaten mostly by the northerners. The few southerners and easterners who eat it probably ate it somewhere random and liked it and decided to recreate it. Couscous is one of the most versatile meals in Africa and it’s arguably the most popular African food in the world used by top chefs.

1 Cup Couscous
2 Tbsp Olive Oil
1-1/2 Cup Broth
1 Medium Onion (Diced)
1 Green Onion (Diced)
1 Medium Tomato (Diced)
1 Tsp Paprika
1 Tsp Curry Powder
1 Tsp Black Pepper
Salt To Taste
